The WASTE2TASTE project addresses the problem of post-harvest fish losses (PHFL) and underutilized fishery by-catch species, which contribute to environmental waste and biodiversity decline.

Project objectives
Sustainable Bioprocess Development
Create scalable, cost-effective, and environmentally friendly processes for extracting collagen, chitin, and fish oil from marine resources.
Valorization of Marine Biomass
Exploit discarded marine biomass (e.g., underused by-catch, fish by-products) to develop high-value, marketable products for food applications.
Bioactive Compounds for Functional Food
Develop bioactive hydrolysates and other compounds for use as functional ingredients targeting health issues such as exercise performance and obesity.
Consumer-Oriented Product Development
Ensure the final products, such as snack bars, meet consumer preferences for health and sustainability while maintaining nutritional quality and safety.
Environmental and Economic Impact
Contribute to reducing marine waste and fostering sustainable economic growth by advancing from lab-scale to commercial-scale production and aligning with EU sustainability targets.
